1. 因?yàn)榧t肉的脂肪比例、營養(yǎng)密度較高,吃太多容易導(dǎo)致肥胖超重,增加患癌風(fēng)險(xiǎn)。
2. 高溫烹飪時(shí),肉中容易形成雜環(huán)胺和多環(huán)芳烴等致癌物。
3. 紅肉中豐富的血鐵紅素可產(chǎn)生自由基從而損傷DNA,誘導(dǎo)氧化反應(yīng)。
其中和乳腺癌患者最為相關(guān)的就是脂肪過量攝入和超重導(dǎo)致的患癌風(fēng)險(xiǎn)[5]。
